Award winning cheddar made from raw milk and aged for intense flavor, with slightly sweet, citrusy notes. This cheese is our only cheese to have tyrosine crystals, amino acid clusters that form with age. Tyrosine clusters are signs of a well-aged cheese, which is why you’ll find them in some of the world’s most loved cheeses.
The Raw Milk cheeses from Jason and Sheri Wiebe are made with Grade A un-pasteurized milk. The farm, started by Jason's grandparents, is located on the Sante Fe Trail.
