This is low temp pasteurized (aka "old school pasteurization") that preserves the flavor and most of the enzymes of natural raw milk. We were not planning to carry this, but the dairy thoughtfully supplied samples with their first delivery of chevre and we found it so delicious we decided to order more for our family. Now we are adding it to the shopping cart. Enjoy!
Westcliffe Dairy is small, family owned farm located at the base of the Sangre de Cristo mountain in the beautiful Wet Mountain Valley with gorgeous views and plenty of grazing land for our herd of Saanen dairy goats.
The farm participates in the Dairy Herd Improvement Registry (DHIR) testing program, with year round monitoring of milk volume, components and herd health. It is a nationally recognized system for evaluating dairy records. "This testing helps us monitor the impact feed changes have on the quality of the milk, seasonal changes in fat and protein levels and helps us develop breeding plans that aim to improve the herd."
